Chocolate Chip Cookies
INGREDIENTS: 1 cup butter flavored shortening 3/4 cup white sugar 3/4 cup brown sugar 2 eggs 2 teaspoons pure vanilla extract 2 1/4 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon salt 2 cups milk chocolate chips
DIRECTIONS: Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. In a large bowl, cream together the butter flavored shortening, brown sugar and white sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla .Combine the flour, baking soda and salt; gradually stir into the creamed mixture. Finally, fold in the chocolate chips. Drop by rounded spoonfuls onto the prepared cookie sheets. Bake for 8 to 10 minutes in the preheated oven, until light brown. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
Makes 2 dozen.

Chocolate Mint Cookies
1 cup sugar 1/2 cup light brown sugar, firmly packed 3/4 cup butter, 1 1/2 sticks, room temperature 2 eggs 1 teaspoon vanilla 2 tablespoons water 3 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt 6 ounces Andes Chocolate Mint Candies pecan halves In a large bowl, cream sugars and butter. Add eggs, vanilla, and water; beat well. Combine flour, baking soda, and salt; add flour mixture gradually to egg mixture; stirring to mix well. Chill dough for at least 4 hours or overnight. Wrap each mint completely in cookie dough.
Place chocolate mint cookies 2 inches apart on lightly greased baking sheets and press a pecan half onto the top of each cookie. Bake at 375° for 7 to 9 minutes, or until cookies are golden brown.

English Toffee Cookies
Ingredients:
1 cup toffee pieces 1 cup sugar 1 egg yolk for batter 1 egg white for top 2 cups flour 1 cop nuts, optional 1 tap. vanilla
Directions:
Mix everything together except the egg white and spread in a cookie sheet. Press down. Spread egg white all over the top. Sprinkle chopped nuts on top and press down a little. Bake 300° for 45 minutes to an 1 hour. Cut into bars or squares immediately.
Temperature: 300°
Baking Time: 45-60 minutes.

Lace Cookies Ingredients:
1 c. shortening 1/2 c. white sugar 1/2 c. brown sugar 2 c. oatmeal 1 1/2 c. flour 2 tsp. vanilla 1/2 tsp. soda dissolved in 1/4 c. boiling water 1 tsp. salt (opt.) 1/2 c. nutmeats, chopped
Preparation:
Cream shortening and sugar, add boiling water with soda. Add vanilla followed by the dry ingredients and nutmeats. Drop from teaspoon and press thin with fork. Bake at 350 to 375 degrees for 10 minutes. Good with chocolate chips or raisins.
